Coffee Toffee Ice Cream Pie

What could make a pie better? Ice cream of course!

This homemade, no bake ice cream pie layers an oreo cookie crust, the best coffee heath bar ice cream, and a chocolate ganache topping. Coffee toffee or coffee health bar ice cream as it may be more commonly known, has always been one of my favorite ice cream flavors.

When I was younger I remember my parents not allowing me to order coffee ice cream after late afternoon. I always thought it was silly, so instead I tried to have it during the day.

This ice cream pie begins with a classic oreo cookie crust. It is layered with coffee toffee ice cream and topped with chocolate ganache. This indulgent combination is one that everyone will love!

Here are a few tips to help you perfect your ice cream pie!

  • You can use any chocolate sandwich cookie in place of oreos.
  • The cookie crust may be on the wet side, do not worry! This allows the crust to hold together well once frozen.
  • Instead of putting together your own coffee toffee ice cream you can also buy it from your local ice cream shop!
  • It will be easiest to stir in the toffee pieces if you leave the ice cream at room temperature for 15-20 minutes until softened.
  • I prefer to cut up chocolate covered toffee pieces or heath bar instead of using toffee baking bits.
  • I find it easiest to cut the pie if you leave it at room temperature for 5 minutes.

This ice cream pie is definitely my childhood dreams coming true!

Coffee Toffee Ice Cream Pie

What could be better than an ice cream sundae and a pie? An easy coffee toffee ice cream pie of course! This no bake ice cream pie layers an oreo cookie crust, coffee heath bar ice cream, and chocolate ganache topping. 

Ingredients
Cookie Crust
  • 24 oreos (2 cups cookie crumbs)
  • 6 tablespoons butter , melted
Ice Cream
  • 1 quart coffee ice cream
  • 3/4 cup plus 1/4 cup toffee pieces , divided
Chocolate Ganache
  • 1/2 cup heavy cream
  • 4 ounces semisweet chocolate , chopped
Instructions
Cookie Crust
  1. In a small bowl mix the cookie crumbs and melted butter. Press the cookie crust into a 9 inch pie pan and set aside. 

Ice Cream
  1. Place the coffee ice cream in a bowl and let soften for 15-20 minutes. Stir in 3/4 cup of the chopped toffee until evenly incorporated. Place the ice cream in the cookie crust and freeze for several hours until firm. 

Chocolate Ganache
  1. In a small saucepan heat the cream to a simmer, do not let it boil. In a small bowl, pour the hot cream over the chopped chocolate and whisk until smooth. Let the ganache sit until no longer warm, 20-30 minutes. 

  2. Once cooled, spread the ganache over the ice cream layer. Top with remaining 1/4 cup toffee pieces. Freeze until ready to serve!

Recipe Notes

Blueberry Lemon Hand Pies

Blueberries have always been one of my favorite fruits.

My mom tells stories of me sitting in the blueberry patch as a child with my shirt covered in stains from all the blueberries I ate. Thus, it is no surprise that they are still one of my favorite parts of summer!

Every summer we always go blueberry picking, it’s a family tradition at this point. With so many blueberries, making blueberry pie was definitely one of the treats that was made.

I thought this would be a perfect recipe for summer and my creative spin on a traditional fruit crisp! I love the addition of almonds in the streusel topping as it adds a nice crunch and nutty flavor.

Triple Chocolate Cookie Dough Ice Cream

I guess I was always bound to be an ice cream lover.

My great grandmother owned an ice cream parlor, which my grandmother grew up in. She always told my sister and I stories of growing up in the ice cream store, ones that I remember fondly.

Lemon Oreo Tart

Have you ever tried lemon and chocolate together?

Until a few months ago, I did not think lemon and chocolate went well together. When anyone suggested this flavor combination to me, I would always tell them that those flavors don’t go well together. If you are thinking that as well, this recipe will change your perspective!

My boyfriend and I were ordering dessert in Portugal when we saw “lemon oreo thing’” as one of the dessert options. Intrigued, we ordered it along with another dessert since one dessert is obviously not enough to share.

When it came out it was essentially a lemon tart with an oreo cookie crust! I immediately dove in and was hooked. The creamy and tart lemony filling surprisingly went very well with the chocolate cookie crust. Ever since then, I have been determined to recreate this dessert.
