When I got this book I was immediately drawn to this recipe, which also happens to be the cover recipe, and I completely understand why!

Buckeye Brownie Cheesecake

Chocolate and peanut butter has always been one of my favorite flavor combinations! This cheesecake combines layers of brownie, peanut butter cheesecake, and peanut butter frosting all covered in chocolate ganache! What more could you want?!!

Ingredients
Brownie Bottom
  • 115 g (4 oz) bittersweet chocolate
  • 115 g (4 oz) unsalted butter
  • 1/4 teaspoon salt
  • 142 g (5 oz) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggsq
  • 94 g (3.3 oz) all-purpose flour
  • 142 g (5 oz) mini peanut butter cups , cut in half
Peanut Butter Cheesecake
  • 455 g (16 oz) cream cheese , softened
  • 100 g (3.5 oz) granulated sugar
  • 180 g (6.3 oz) peanut butter
  • 2 teaspoons (6 g) cornstarch
  • 3/4 cup (177 mL) whipping cream
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 3 eggs
Chocolate Ganache
  • 340 g (12 oz) semisweet chocolate , chopped
  • 1 cup (236 mL) whipping cream
  • Pinch of salt
Peanut Butter Glaze
  • 57 g (2 oz) unsalted butter
  • Pinch of salt
  • 180 g (6.3 oz) peanut butter
  • 85 g (3 oz) powdered sugar
Decoration
  • Mini peanut butter cups , cut in half (optional)
Instructions
Brownie Bottom
  1. Preheat the oven to 350Β°F. Butter an 8-inch springform pan, line the bottom with parchment paper and dust the sides with flour. 

  2. Melt the chocolate, butter, and salt together in a heatproof bowl in 30 second intervals in the microwave, until smooth. Stir in the granulated sugar and vanilla, and let cool slightly. 

  3. Add the eggs, one at a time, and whisk until fully incorporated. Fold in the flour and halved peanut butter cups until just combined. Pour into the prepared pan. Bake for 15 minutes. 

  4. Remove from the oven, and let cool for 10 to 15 minutes. Reduce the oven temperature to 300Β°F to bake the cheesecake. 

Peanut Butter Cheesecake
  1. While the brownie layer is baking, get the cheesecake layer ready. In a bowl using a hand mixer, whip the cream cheese and granulated sugar until creamy and smooth. Add the peanut butter, cornstarch, cream, salt, and vanilla ad mix on medium speed until well combined and the batter is smooth with no lumps. Add the eggs, one at a time, and whisk on slow speed (taking care not to overbeat).

  2. Pour the cheesecake batter over the slightly cooled brownie layer. Tightly double wrap the bottom of your springform plan with two pieces of foil. Then place the springform pan in a larger baking tray (that can easily fit the 8-inch pan), and fill the baking tray with hot water. The water level should be about halfway up the sides of the springform pan, and make sure the water doesn’t seep through the foil. Place the baking try in the oven and bake for 60 to 70 minutes, until the cheesecake is set but slightly jiggly in the middle when you shake it gently.

  3. Turn off the oven, and let the cheesecake cool for 15 to 30 minutes while still inside the oven with the oven door left ajar (the residual heat helps cook the cheesecake further plus you don’t have to handle the cake while its too hot). 

  4. Remove the cheesecake from the oven and the water bath, and let cool to room temperature completely; this can take up to 4 hours. 

  5. Gently loosen the cheesecake from the pan. If the cheesecake is sticking to the pan, you can run a think butter knife along the edge of the pan to loosen the cake. Cover the cheesecake and refrigerate for at least 8 hours or overnight. 

Chocolate Ganache
  1. Place the semisweet chocolate in a heatproof bowl. Add the cream and salt to the chocolate and microwave in 30 second intervals, stirring in between, until the chocolate has melted. 

  2. Mix to make sure the ganache is smooth and let cool to a thick, spreadable consistency. You can keep the chocolate ganache in the fridge to speed up the cooling process. 

Peanut Butter Glaze
  1. Melt the butter, salt, and peanut butter in a heatproof bowl in the microwave in 30 second intervals, stirring in between. Add the powdered sugar and mix until smooth. The glaze will thicken as it cools. Let cool to a spreadable consistency.

  3. Once chilled, transfer the cheesecake to a serving dish. Spread the chocolate ganache along the sides and spread the peanut butter glaze on top, and then decorate with extra peanut butter cups, if desired.
