Who doesn’t like cookies? Not anyone I have met.
One of my new favorite one-bowl desserts are cookie bars! Essentially, you make cookie dough and press it into a square baking pan (what could be easier!). What’s even better is that the cookie dough does not need to be refrigerated.

In this recipe I used both Caramel OCHO Candy Bars and Peanut Butter OCHO Candy Bars. Just chop the mini or full size candy bars into bite-sized pieces and add them to the cookie base.
Why caramel and peanut butter? Well, why have just caramel or peanut butter when you can have both! I love the sweet notes of the caramel candies and the saltiness of the peanut butter candy.
These cookie bars contain cornstarch which makes them stay soft for days! This recipe produces irresistibly chewy cookie bars by using more brown sugar, melted butter, and an extra egg yolk.
Anytime I want a mouthwatering chewy cookie (or cookie bar), this is my go-to recipe!
Plus, that oozing caramel is absolutely mouthwatering 🙂

Filled with gooey caramel and peanut butter candies, these soft and chewy cookie bars will be a crowd favorite. Even better, you only need one bowl to make them!
- 1 and 1/3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cornstarch
- Pinch of salt
- 1 stick (8 tablespoons) unsalted butter , melted
- 1/2 cup light or dark brown sugar , packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/2 cup chopped Caramel OCHO candy bars
- 1/2 cup chopped Peanut Butter OCHO candy bars
Preheat the oven to 350°F and line an 8 x 8 square baking pan with aluminum foil.
In a small bowl whisk the flour, baking soda, baking powder, cornstarch, and salt. In a medium bowl mix the melted butter and sugars. Whisk in the egg, egg yolk, and vanilla extract. Add in the dry ingredients and mix until just incorporated. Add the chopped Caramel and Peanut Butter OCHO candy bars and mix.
Evenly press the cookie dough into the prepared baking pan. Bake for 15-18 minutes until the cookie bars are golden brown. Let the bars cool on a wire baking rack and slice into 16 pieces. These cookie bars can be kept at room temperature in a sealed container for 3-5 days.
