The cocoa in the cake adds a rich chocolate flavor that plays well off of the gingerbread spices while the chocolate chips add texture and an extra burst of chocolate.

The base of this frosting is cream cheese which counteracts the sweetness of the butterscotch. Together, all of these flavors and ingredients make for an incredible winter dessert!

One question you probably have is, “what is the difference between butterscotch and caramel?”

Butterscotch contains butter, brown sugar, and heavy cream. Caramel begins with granulated sugar which is cooked until it melts and develops an amber color. The butter and cream are then added in.

While I love both butterscotch and caramel, I decided to use butterscotch in this recipe as the flavor goes very well with the spices in this gingerbread!

Here are some tips for the ultimate gingerbread cake!

  • Add the chocolate chips to the last portion of flour and mix to coat. This will prevent the chocolate chips from sinking to the bottom of the cake.
  • Refrain from opening the oven while the cake is baking as this may cause the cake to fall slightly in the center. If the cake falls in the center it is ok! The frosting will cover this and the cake will still taste delicious!
  • To cool the butterscotch sauce more quickly, briefly place it in the freezer or the refrigerator.
  • Before making the frosting the butterscotch sauce should be cooled completely. The sauce can be made ahead of time and stored in the refrigerator until ready to use.
  • For the butterscotch drizzle (if desired), slightly warm the remaining sauce in the microwave just until it is pourable but not hot.

Ingredients
Chocolate Gingerbread Cake
  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 8 tablespoons (1 stick) unsalted butter , softened
  • 1/2 cup dark brown sugar , packed
  • 1 cup molasses
  • 1 large egg
  • 1 cup hot coffee
  • 1 semisweet chocolate chips
Butterscotch Sauce
  • 3/4 cup dark brown sugar , packed
  • 3/4 cup heavy cream
  • 6 tablespoons unsalted butter , cubed
Butterscotch Frosting
  • 8 ounces cream cheese , softened
  • 8 tablespoons (1 stick) unsalted butter , softened
  • 1/2 cup powdered sugar
  • 1/2 cup butterscotch sauce
  • Pinch of salt
Instructions
Chocolate Gingerbread Cake
  1. Preheat the oven to 350°F. Line a 9-inch square pan with parchment paper. 

  2. In a small bowl whisk the flour, cocoa powder, spices, baking powder, baking soda, and salt. 

  3. In a medium mixing bowl beat the butter, brown sugar, molasses, and vanilla using an electric mixer. Add the egg and mix until combined. 

  4. Add the flour and hot coffee alternating, beginning and ending with the flour. Mix in the chocolate chips. Pour the batter into the prepared pan. Bake cake for 30-40 minutes or until a toothpick inserted in the center comes out clean. Cool in pan, then invert onto a wire rack to finish cooling. 

Butterscotch Sauce
  1. In a small saucepan melt the butter over medium heat. Stir in the brown sugar and cream. Bring mixture to a boil and cook for 3 to 5 minutes. Remove the pan from the heat and set aside to cool.  

Butterscotch Frosting
  1. Using an electric mixer beat the butter and cream cheese until smooth. Add in the caramel sauce then slowly add the powdered sugar. Beat on medium-high speed until light and fluffy, 1-2 minutes. 

  2. Once the cake has cooled, frost and decorate with remaining butterscotch, as desired.
