These Salted Caramel Blondie Truffles combine a chewy blondie with cream cheese and homemade salted caramel sauce. This mixture is then generously dipped into a bath of melted chocolate! What else could you want?!

Since blondies are fairly dense and sweet, I added cream cheese to lighten the truffles and cut through the sweetness.

If you have never made homemade caramel and are nervous, don’t be! Although I have been baking for years the first time I made homemade caramel was last month. I had heard how hard it was so I avoided it for years. Now, after making it successfully a few times I literally want to make it at least once a week!

For the caramel, start by placing granulated sugar in a clean saucepan over medium-high heat. Constantly stir the sugar until it melts. This can take 5-10 minutes, so be patient (we all know this is not my forte)! Over the course of this time, the sugar will form lumps. Keep stirring until the sugar melts and forms a thick syrup. A few small lumps may remain and that is ok.

Once the sugar has melted, immediately add the cubed butter. Continue to stir as the caramel bubbles up the sides of the saucepan. Add the cream and continue to stir. Since we are adding cold ingredients (butter and cream) to hot sugar, the caramel will bubble up.

After the addition of the cream, the caramel may appear to separate. Just continue to stir and as the cream heats up the caramel should become silky smooth!

Here are some additional quick tips to make these mouthwatering truffles!

  • Cutting the edges off of the blondies removes the crust so the truffle filling can be smooth and creamy.
  • To cool the blondies and salted caramel faster, place them in the refrigerator. When cooled the salted caramel will be thick.
  • You can use a spoon to mix the truffle mixture although I found that using an electric mixer is easier and leads to a smoother truffle.
  • The truffle filling will be soft, this is fine! If they are too soft to work with place them in the freezer until firm.
  • Since the truffles will be frozen before being dipped in melted chocolate, the chocolate surrounding the truffles will harden quickly. This means that they will be ready to eat sooner!

Salted Caramel Blondie Truffles

These Salted Caramel Blondie Truffles combine blondies and salted caramel for a mouthwatering and adorable treat! They also make the perfect homemade gift!

Ingredients
Blondie
  • 1 stick (8 tablespoons) unsalted butter , melted
  • 1 cup dark brown sugar , packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup all-purpose flour
Salted Caramel
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter , cubed
  • 1/2 cup heavy cream
  • 1 teaspoon salt
Final Assembly
  • 4 ounces cream cheese , softened
  • 3/4 cup salted caramel
  • 10 ounces semisweet chocolate , melted
Instructions
Blondie
  1. Preheat oven to 350°F. Line an 8 x 8 baking pan with aluminum foil, then grease the pan. 

  2. In a medium bowl whisk the melted butter, sugar, and salt. Add the egg and whisk until smooth. Mix in the flour until just incorporated. 

  3. Bake in preheated oven for 20-25 min or until a toothpick is clean when inserted into the center of the pan. Cool on a wire rack.

Salted Caramel
  1. Place the sugar in a medium saucepan over medium-high heat. Whisk the sugar for 5-10 minutes until it has fully melted, although a few small lumps may remain. Add the cubed butter and whisk. Then add the cream. Be careful as the caramel will bubble up against the saucepan. Continue to whisk until the caramel is smooth. Add the salt and take off the heat. Set aside to cool. 

Final Assembly
  1. Once the blondies have cooled cut the edges off and set them aside. Crumble the rest of the blondie into a mixing bowl. Add the cream cheese and salted caramel. Using an electric mixer beat the mixture until combined although little chunks may remain. Place the mixture in the refrigerator for at least 1 to 2 hours. 

  2. Using a 2 teaspoon cookie scoop, scoop the truffle mixture onto a cookie sheet lined with parchment paper or a silicone baking mat. Roll each truffle into a ball and place them in the freezer for at least 1 hour. 

  3. Dip each truffle into the melted chocolate until coated, making sure to shake off excess chocolate. Decorate truffles with sprinkles as desired. When the chocolate has hardened place the truffles in the refrigerator until ready to serve. The truffles are best served cold and can be stored in the refrigerator for up to a week.

    1. Glad to hear it! I find that the easiest way to dip truffles is to individually put them in the melted chocolate and coat them. Then using a fork, place it under the truffles and shake off the excess coating. I hope that helps! If you have any questions just let me know!

    1. They definitely are! I have definitely burnt caramel as well and it doesn’t taste good. I have found that if you stir the sugar until it has melted and immediately add the butter then the cream, you should have the perfect caramel flavor!
